Hi, whenever I print artwork from an Illustrator PDF the color is different than it appears on my screen. What am I doing wrong?

You have probably defined colors that cannot be printed.
But maybe something else is off.

I made this artwork in Illustrator, I saved it as a pdf (print quality, no color conversion) and sent it to print. The colors all came out looking different. The printshop told me to make sure I was in CYMK mode which I am. I am new to Illustrator so its possible that something basic is wrong with my settings or the way I'm saving it.

There are two things that may affect this:
1. your color settings. THis is color management and if it is way off then you don't see the actual colors on your monitor
2. the document color mode. You are seeing the correct things, but you just don't know that it cannot work.
Using the appropriate document color mode can prevent a lot of bad things, but if your monitor does not show the correct colors then you are still in for a surprise.

Did you start out in CMYK colour mode, or in RGB and then switched?

What do you mean with "properly"?
Some colors cannot be printed. Everything else can be handled with proper color management and appropriate color profiles.
