Bonjour,
Merci,

Are you exporting PNGs?
Illustrator doesn't embed a color profile in them.
If that is not your issue,
please tell us step by step what exactly you are doing and which apps your are using and what does not work.

I have this issues with 2 differents kind of file, on 2 different programs.
I open some files : JPEG pictures on Photoshop and I saw that the colors are not as usual. Then, I export by "cmd+option+shif+S" and on the visualization window the colors become good as usual.
I open a .ai file, and I saw that some colors are not good. For example I saw an orange button but it must be red/orange. When I export the file ("cmd+option+shif+S"), as with photoshop, the colors become ok.
It's very strange because I didn't do nothing recently with my adobe programs 😕

Which document color mode are the files in?
Do the color values change?
How is your color management set up?
In which application do you open the files when they are OK?

Which visualisation window? The preview in your system? It's likely not color managed, so doesn't use the color profile.
The standard Adobe presets for color management do not put up warnings when you open files that have different color management. Can you turn the warnings on in Illustrator and Photoshop? And then try again?
