for example, to this raster object, according to technical requirements, I applied the spot color "belila" - a technical color from the typography palette for printing with white paint. I had to export the image to corel, apply the duotone color there, and export it again to illustrator to assemble the layout.

You can convert an image to greyscale in Illustrator and you can apply a (spot)color to a greyscale image in Illustrator.
