Editable Text with rounded corners on Drop Shadow in Illustrator

I am trying to create a file with editable text that will have a drop shadow that will have rounded corners. I have attached a picture of what I am looking to do. I have watched many tutorial using the appearance window and can get everything to look great except rounding the corners. When I use the stylize window for rounded corners, it rounds all of the u, o more. Hopefully someone has the answer I need. Much apprectiated in advance.

Would it be easier to start with a font with rounded corners - Albiona Soft Heavy for example (modified)?

How's this - I can't workout how to blend the drop shadow elements but if you have enough of strokes (and they're the same color - my are different just to show they are there) it might work...

Rounded corners by using Round Joint on stroke... so ignore my earlier comment!
