If I have a EPS file on my desktop (or anywhere), why doesn't it show a preview of that file like you can with AI, PSD, JPG...etc? Why is this still a thing?

Thanks for confirming. macOS no longer includes built-in functionality to view .ps and .eps files. Learn more here: (https://adobe.ly/3DNssBT). You may want to use third-party plugins/programs for this functionality.
