Just in the last week I've noticed that when I export a jpg it doesn't add the '-0#' at the end of the file name when there is only one artboard. It used to save as "File name-01.jpg". Now it just saves as "File name.jpg". So when I add an artboard it will then save as "File name-01.jpg" and "File name-02.jpg", but not save over the original file. Leaving 2 files that are the same but named slightly different. Not sure if something updated, but I want it to always save with the '-0#' like it used to. Any help would be appreciated!

I would like to inform you this is an intended change in the latest version of Illustrator to accommodate the request on this UserVoice (https://illustrator.uservoice.com/forums/333657-illustrator-feature-requests/suggestions/31723057-wh...).
The workaround is to rename the file name while exporting a specific artboard.
