Font preservation?

Hello all.  New to Adobe and apologize if the question is very basic.  I searched the community and did not seem to find any answers.  I am building a catalog, and when I copy/paste a section or clip to reword for the next section, it does bring over the existing font, etc. - but when I delete and retype the new descriptions, it uses an odd font I don't want.  Is there a way to ask the program to maintain the fonts in each section?  I didn't find an area in preferences to change the default font for this document.  Thanks in advance for any advice you can give!!

Also, try turning off Enable Missing Glyph Protection under Illustrator's Type preferences and share your observations.
