I would draw thick lines.
Apply gradient strokes to them
Expand the Appearance to get gradient meshes.
And then edit the meshes.

Hi Monika.
Thnak you kindly for your advice. It has answered my quesion.
Can I expand on. Once you have an expanded appearance...is there a process that limits the number of mesh points?
If you have time I appreacite your thoughts.
The target image presents base colour "blue" with variation with highlights per focus attached.
Kind regards,

No, you cannot really influence that.
You can try and draw your initial paths using ideal anchor point and handle positions and then starting with a very basic gradient (just 2 colors, no messing with the center point). But that's about it.
