how to completely fill an object, that is grouped but won't fill color correctly

Use the Direct Selection Tool (A) on the single item you want to change.

Can you show some screen shots with the object selected and the Layers panel open and expanded?

As I (mis)understand it, you can try two simple things:

Hold Ctrl/Cmd and press E, which toggles between GPU and CPU; you can repeat to toggle back if it makes no difference.

Look in the Infor panel and see whether the path is closed, and close it if it is open.
