After updating the MAC OS Monterey, the software will automatically jump away

Try and reset the Illustrator preferences (this will erase all settings)

If that does not work, you might need to uninstall, run the Adobe Cleaner tool and reinstall. And also: older versions might not work, you need the latest one.
