How do I optimize email signature for a dark mode?

I'm currently working on designing our email signature on Illustrator. My management has required me to create 'a dark-mode optimized email signature'. I know that different email platforms invert colors and that's about it.

Does anyone know about the requirements for the dark mode optimization?

How exactly can it be performed?

Maybe just keep email to plain text instead of using graphics in it.

Many email apps are set up to strip graphics anyway. Also: graphics are not accessible.
