I don't use illustrator much normaly photoshop, but I need it for this. Can anyone tell me how to remove the overshot yellow area?

Is that a linked image? (I can't read German)

If so, you will probably need to mask it. Draw a shape that will act as the mask on top of the image, then select both and use Object > Clipping Mask > Make

It looks that 6,25% to zoom out to see the image is a little too much.

Try to scale down the image and use a clipping mask as suggested by Doug.

Or better set a correct resolution in Photoshop and prepare your image there.
