I have several artboards in a Photshop file. How do I place just one of those Photoshop artboards into an Illustrator file? When I try to place, it will be all the artboards at once instead of a single artboard. Is there a setting or placing setting I am missing?

If you open the PSD in Illustrator, you'll see a dialog where you'll get an option to select Convert Layers to Objects. When the file opens, Illustrator will preserve the artboards. It doesn't let you select only one artboard, though.

From Photoshop, you could also try adding the content a library. Then go to the Libraries panel in Illustrator and drag and drop that content.
