How to save a resume correctly with Illustrator in PDF?

I create a resume (CV) with Illustrator 27.0 with some texts and images.

When I save in PDF I use this configuration:

The problem happens when I open this PDF file with Adobe Reader and try to copy some text.

When I paste this text somewhere else, strange characters appear.

Maybe that's why ATS software can't read my resume and because of that, I'm not called in interviews.

Does anyone know how to solve it?

Looks like the Source Sans Variable font is problematic.

The Source Sans Pro seems to work.

What happens if you don't use a variable font?
