I'm trying out Adobe's new Text to Vector functionality in Illustrator. I cannot extract styles from an image (as it says I can). I can only extract styles from other vector graphics. How can I extract style from an image?

You can only extract styles from vector artwork. "Image" is a very broed term that can technically be any kind of file.
If you want to create artwork based on images, you could try firefly online or Photoshop.

Actually, you can. I was just able to use the extract style feature on another placed jpeg image, and it used that style pretty successfully in the images it generated. For some reason, the original image I was trying to pull the style from still won't allow me to for whatever reason.

It always shows the forbidden cursor.
And still does it. So maybe it's just the wrong cursor?
I tried it with a placed image on an artboard and turned on "Use artboard", but that always ended with an error.
What you can try: embed the image
Change the image size/resolution (via Object > Rasterize or the crop function)

Yeah, I still haven't figured out why the first image I tried still shows the forbidden curser, but the second image I tried worked fine. Both are RGB jpeg images. For the one that wouldn't work, I also tried saving as tif, psd and png, I even took a screen capture of the image and tried to use that. I think there is something about the image the AI doesn't like.

Before you click on it, the A.I. cannot know that.

It works for me. Place Image in Ai, Select Style with eye dropper and generate object that will appears on your image.
