Illustrator is nearly unusable with this bug and I will miss a deadline.

What OS are you using?

The grid (View > Show Grid) or the pixel grid (View > Pixel Preview)?

I don't see a difference with the regular grid. Pixel Preview switches to CPU mode, which does make a difference however.

Sorry about the trouble. I would request you to update your macOS to Big Sur to improve the performance of Illustrator. Many users have claimed that updating to macOS Big Sur has increased their GPU performance and helped resolve issues such as this. Let us know how it goes after updating.
