Illustrator color management, soft proofing (broken?)

Start with a series of CMYK solids in a new CMYK document, nothing fancy.

Make sure to assign US Newsprint SNAP to the document.

Now, head over to View > Proof setup. This is what I get (French UI) :

The trouble is that, this interface is totally irresponsive?

It maybe a silly thing I'm missing but, I can't figure why, when I import my document in Photoshop, using the same exact profile and View > Soft Proof setup :

 I get the expected behavior?
