Illustrator crash on M1 macbook pro

I recently bought a MacBook Pro with M1 chip, and it happened several times that when illustrator is running the whole computer crashed, with pink screen and re-strart.
When i re-open illustrator the document i was working on has no images, and all the files (even the linked ones) seems to be incorporated and absent. 
I cannot work like that, some of you had the same problem?
