Hi @Sammy Red the Betta Fish,
Glad to hear things are improving. In addition to the expert advice and the steps you already mentioned, if the issue is still not fully resolved, please try this as well and let me know how it goes.
First, close Illustrator and rename the CEP folder to CEP.old. On macOS, you can find it at /Library/Application Support/Adobe. On Windows, it's located at C:\Program Files (x86)\Common Files\Adobe.

Is it possible to click and select a preset from the Print or Art & Illustration tabs?
Did you try to reset the Preferences: Cmd or Ctrl + K and click the Reset Preferences button?

If Adobe Illustrator 2025 is not creating new files, try these troubleshooting steps to resolve the issue:
Reset Preferences: Go to Edit > Preferences > General (Windows) or Illustrator > Preferences > General (macOS), then click Reset Preferences and restart Illustrator. This can fix issues related to app interface or file creation problems. Alternatively, press Alt+Ctrl+Shift (Windows) or Option+Command+Shift (macOS) while launching Illustrator to reset preferences.
Use Legacy File New Interface: If the new document creation interface is problematic, disable it by going to Edit > Preferences > General and selecting Use Legacy File New Interface.
Check for Updates: Ensure Illustrator is updated to the latest version for improved stability and bug fixes by using the Creative Cloud desktop app.
Run Illustrator in Safe Mode: Launch Illustrator in Safe Mode to diagnose and isolate any corrupt fonts, plug-ins, or drivers causing the issue. Follow the prompts to disable problematic items. See the detailed steps on Safe Mode troubleshooting.
Check System Requirements: Verify your system meets the minimum system requirements for Illustrator 2025.
Try Creating New Files from Templates: Instead of blank files, try creating new documents using templates from Adobe Stock or presets to check if the issue persists.
Reinstall Illustrator: If none of the above work, consider uninstalling and reinstalling Illustrator using the Creative Cloud Cleaner tool for a clean installation.
