Illustrator not refelcting changes

Hey Aobe Community! I have one for you. I've been running into this issue periodically. I'll change the color of a shape (usually and in this instance with the eye dropper tool) and the object will remain the previous color. The thing is, The appearance panel indicates it's filled with the desired color (#000000)

Is this a glitch, a memory issue, or a property/setting? Any help would be appreciated.
