Hi,
It looks like the Illustrator file I am working with will not let me edit text or decorative borders around the text. I checked this doc., and the text is made of paths. Does this mean that I cannot edit this text made of these paths? If there is a way to edit from this document, please let me know how.

As soon as type is converted to paths it is not type anymore (technically speaking). Therefore you cannot edit it as if it were still live type. You can modify the paths, but that's all you can do.
Most of the time retyping the text with appropriate fonts is the best route you can go in that case.

If your text is converted to outlines by Expand or Create Outline commands you can NOT edit it as text but you can edit it as outlined shapes.
If you outlined it but you can not select it you should check the LOCK option or the layers if it is locked or not.
Or Press Ctrl + Alt + 2 to ensure that your objects not locked.

If I retype, is there a way to adjust font style and size? Could I find out what font type / name and size were used to create the type to begin with?
Could I copy these newly made paths into a new Illustrator doc, then edit / work from there? Or copy into InDesign, edit, then export as Illustrator?
If I edit as outlined shapes, is there a way to tell what font type and size were used to create the document originally?

1- you can make a solid color for your outlined text and have a Print Screen for it.
2- Go to WhatTheFont! « MyFonts
3- Upload your print screen text image 4- Redefine letters and it will give you the name of the Font Name then you can download it or you can search for it in another website.
