Illustrator stalls out (spinning beachball) when trying to open ANY file. A restart of the program and computer does not resolve the issue.

Did you try resetting your preferences? You can reset in Preferences/General.
If you can't get that far, try holding shift+Cmd+Ctrl+Opt (Mac) or shift+ctrl+alt (Win) prior to the launch screen.

I reinstalled AI and it opened just fine.
Let it sit while doing other work, came back to it, tried to open a file and it just stalls.
Do you have a font manager? How many fonts do you have activated?
Did you reset AI prefs (even if you reinstalled, it could be previous prefs)?
You could contact Adobe support - they can schedule a remote session to look under the hood.
I have not dumped prefs... what's the string to do that?

How many fonts do you currently have active?
Many dozen font sets...... hundreds of individual fonts..... many are old and some will be obsolete in 2023 with Adobe.
I manage them in Suitcase Fusion.
I found, through some blogs, that font issues in emails
with Big Sur can be dumping older fonts. But a font as simple as Ariel or Helvetica will not display.
It shows as a question mark inside individual boxes for each character.
I'd go into Suitcase, flag or remove and Type1 fonts and make sure you have an OpenType version active.
As for your AI issue, turning off GPU is a band-aid fix but it does point to a larger issue with your graphics card not being up to snuff. Hopefully you can get that M1 Mac sooner than later.

Was wondering about the graphics card.... occasionally, I get a screen flash.
I replaced my last iMac due to its age and failing graphics card..... I tend to keep my iMAC for a minimum of 6-7 years. I may need to upgrade before M1 version simply because I don't want to go down.... and right now it looks like M1 version may not be out until 2023.
I would look into the Mac Studio. The whole iMac monitor/HD combo fell out of my favor years ago for the same issue. Having a separate monitor also means I can adapt/change when needed. Just my 2¢.
Funny you bring that up, I went on the Apple site and notice that the 27" iMAC is gone. I was looking at the Studio... actually trying to figure out what the heck it was. So this Studio looks like it's a revved-up Mini...?
What about the RAM... I am always bumping my limit with multiple apps open with 32 RAM?
What is "400GB/s memory bandwidth" .... this is how they describe on the Apple site.
Just wanted to update you, and Thank You greatly for your help:
Did a remote with Adobe; we needed to do a complete fresh reinstall and turn off GPU in Preferences.
That resolved it.
They also suggested updating to the latest OS that just came out recently.
I am/was apprehensive to do that because updating to Big Sur posed a but of issues and challenges.
One major issue was my email didn't work for weeks... strangely it slowly came back on its own.
Certain fonts STILL don't display properly in emails.
But hey, you were a big help here.... thanks
