Illustrator wont let me recolour certain objects bug

I have been having this issue for a while on various different versions of illustrator.

 

There seems to be a bug where I am not able to recolour certain objects without having to double click and then double click again and then one more time to open the objects up (even though i did not group these) and only then can I re-colour, I think it usually happens on certain objects when make a copy of them. It's just behaving very strange and it's making it very difficult to get anything done!

 

Help with this would be much appreciated. I have attached a video to help Illustrate the issue.

Thanks for the help however thats not it unfortunely: Take a look at the screen shot, appearance panel still shows different colour to the object itself, thats after I use the eye dropper tool to try to get the yellow on the blue object

The color of the "Contents" is on top of the color you applied.

Let me outline the steps I took as I am not sure I am following:-

 

- I selected my object I want to recolour (lets call this object A) 

- I select the eye dropper tool

- I sample a colour from another object within the same artboard I want to apply over object A

 

From my understanding and how Illustrator has always worked, this colour should now be applied over the top of Object A. I also have the same issue when using the swatch panel and trying to apply over object A. Its never been the case before I started having this issue where I needed to delve into the apperance panel, if thats the case why bother having an eye dropper tool and a swatch panel if you cant simply click on the colour and it instantly apply over your object.

The eyedropper tool picks up appearances.

If you want to pick up just the color, hold down the shift key.

Holding down shift makes no difference, as I said earlier even if I use the swatch panel to change the colour it does not change...

LATEST

If you already created that additional fill in the Appearance panel, then holding down shift will not help. So without seeing your particular file, this cannot be solved.
