Issues understanding Illustrator's new 3D and materials feature

Hi there all

 

Essentially I am trying to follow a tutorial on how to do a Grafitti text effect.  This involves making the letter's 3D and then using "expand appearance" to change and manipulate the various 2D shapes created by the 3D effect. However when I expand the letters now it simply creates one complete image.  In the layers panel it even says "Image" rather than a bunch of "paths".  Any assistance would be greatly appreciated. I have attached the in progress file with the top text line being before expanding the appearance and the bottom being after it's been expanded.

The tutorial likely covers the old 3D effects. You have to use them via the submenu that says "Legacy 3D effects"

Awesome, where is the 3D classic sub menu? I've searched everywhere for it. Can't seem to find it
