Honestly, at this point I am just convinced that Adobe is no longer interested in producing software that works properly. I am unable to determine what the cause is, though I think it may be something to do with having multiple artboards. Yes, GPU performance is enabled. Disabling Animated Zoom sometimes helps, but not always. I'm not even doing anything intensive.
It's insane really, as I can build very complex scenes inside 3D software, run the most demanding games at 144 FPS, but I can't have a smooth time in Adobe's software? It's an endless headache. I've also experienced the same issues on a fully spec'd MacBook M3 Max Pro. All I can determine is that it isn't a hardware issue, it's a software issue, and judging by the time it takes Adobe to turnaround essential bug fixes and the fact that I've been experiencing this for 10 years now, it is never going to be resolved.
Tbh think I'm about to make the switch to an alternative. If you're experiencing similar issues, just know that you aren't alone and that if Adobe try gaslighting you into thinking it's an issue with your machine, it probably isn't. I mean, if you're running a potato with 8GB RAM then yeah, you're going to run into walls, but there are fundamental issues with the software either way.
There are also unresolved issues with incompatible GPU's on the last generation of intel MacBook Pro 16" models that neither Adobe or Apple would take any accountability for, which left me totally stranded a few years back. So tired of these big corporations that are poorly organised and badly managed who I have paid thousands to over the years.

Would you mind sharing more details like the exact version of the OS/Illustrator on your Windows and Mac computers and if Illustrator behaves this way when working with a particular tool/feature or file(s) from a specific folder and a small screen recording of the problem?
