Mac OS Monterey visual bug

Hello! I am experiencing a weird issue with Illustrator after updating to Monterey. I have attached a video with the issue. When using the "Fill Color" option, Illustrator shows strange visual glitches that cycle slowly. They only stop when I restart the computer, and start again when using the "Fill Color" option. 
Specs of the computer:

24 inch iMac M1, 2021
16GB Ram

256GB SSD

The issue persists both when using the latest version of Illustrator, and when rolling back to a previous version.

What could be causing this? What can I do?
