My swatches are "new pattern swatches" therefore I can't create new patterns

How do I convert those swatches to CMYK solid fills? It's very frustrating.

I suppose you dragged an object filled with a color to the swatches panel, which makes it a pattern.

You can drag the pattern swatch from the Swatches panel to your Artboard. 

Click with the Eyedropper Tool (I) on the color and click on the + button in the Swatches panel to add a color swatch.

Remove the pattern to avoid confusion.
