new 3D panel, how do you change the vanishing point?

The new 3D is very much a work in progress, and the lack of perspective adjustment is an obvious example. It is my hope (and yours, apparently) that this will be remedied in the fairly near future. So, to answer your question, at this point you don't.

 

You can still use the 3D Classic mode to achieve  a kind of perspective.
