If (1) the document grid is visible and (2) I try to go into Outline Mode (Cmd+Y), Illustrator stops responding and I get a spinning beach ball that lasts forever. The only way to regain control of Illustrator is to Force Quit and reopen the program.
This also happens if I’m already in Outline Mode and I try to show the document grid; in other words, it doesn’t matter which order I turn on Outline Mode or the document grid.
This happens consistently for me, regardless of which file I’m using.
Here are my specs:
Mac Studio (2022)
M1 Max
32 GB RAM
MacOS Monterey (12.4)
Illustrator 26.3.1

Sorry to hear about this experience. I would request you try resetting Illustrator's preferences by following the steps shared in this article (https://helpx.adobe.com/illustrator/kb/troubleshoot-preference-issues.html) and sharing your observations.
Disclaimer: Please note that resetting preferences will remove all custom settings, and Illustrator will launch with the defaults. You may take a backup of these settings from the location mentioned in the article.
