Paths not filling correctly/adding these weird bits to points.. HELP!

Make sure your OS & Illustrator & hardware are meeting the system requirements

Try Command E to on Mac toggle the GPU perfromace. Look up at top of window to see the filename (mode you are in) to confirm what mode you are in.

If you were working wtih envelope distortions, you can select the item, and in the appearnce flyout >> clear appearance
