I have the same problem. This is an Adobe Illustrator Error as all my other adobe products shows up in File explorer, I have Two Laptops, A Mac Air and a PC and in all of them I can't find Adobe Illustrator in the the root file and therefore can link it to NVIDIA which is a problem as I can't record my leessosn for my students.
An no use reporting this to Adobe as they will never respond. But the day will come when something will replace Adobe and then they might reply or give better support.

I use Free SageThumbs shell extension.  It displays PSD & AI preview thumbnails in Win File Explorer.

Sorry to hear about this experience. Previews/Thumbnails generated by File Explorer (Windows) or Finder (macOS) are controlled by the system's OS and not Illustrator. I would suggest you try Adobe Bridge, as suggested by Nancy, for this purpose, as it can provide a dedicated and customizable preview window and thumbnails for PDFs, Illustrations, Photoshop Documents, RAW photographs, and much more.
