Stroke won’t change on text - iPad AI

I've looked everywhere for this answer and I'm having no luck . I can not get the stroke size to change on a text I'm using. It was working fine earlier today on another artboard.  Please save my sanity IMG_0627.jpegIMG_0626.jpeg

Please show which ont this is.

Please apply a red color to it and make the stroke thinner, like 10 points.

Please show the layers panel.

Actually it was in outline mode even tho the preview box was checked. That's another issue I am constantly facing in AI- sometimes it appears that changes I've made are not occurring  but when I close the window and see that image in the gallery, I can see that those  changes were actually made  .
