When you import an image like a jpg or png to Illustrator it doesn't allow you to change the colour. This is because it is not a vector image. You would need to either use Image Trace to create it as vector or draw the logo again with vector tools like shapes and the Pen Tool.
If you want to change the colour of a png image Photoshop is the better option.

As Jane suggested, Photoshop would be better to change the image colors.
But you can also embed the image in Illustrator and choose Edit > Edit Colors > Invert to make it black (and after that use Adjust Colors).

Illy (job description Adobe Illustrator) can change the colour for you, and she is always eager to help.
You can, starting with the PNG logo:
1) Create a rectangle or whichever path large enough to cover tha entire logo, then give it the desired colour, the hold Ctrl/Cmd and press X then B to bring it beneath the logo;
2) Select both logo and path, then in the Transparency panel click Make (Opacity) Mask with Clip ticked and Invert Mask unticked;
3) Save/export the new coloured logo as PNG.
