Unable to pick color swatch for Type

Hi,

I'm attempting to change the color of a font using both the eyedropper and the swatch panel with no luck.

I'm following along with this video. At 2.47 minutes, she changes the color, but I'm unable to complete the task. I reset my preferences and restarted to no avail.

I'm on a Dell using Illustrator 26.5

You should either expand the envelope or double click it to edit its contents.
