Is this a bug? When I add any extra points to a gradient fill I can not select them. As I tap them it just creates more new ones. . I'm using iPad Pro 11" 2020 with Pencil 2
Is it possible you are not tapping exactly on the color stop you want to change and Illustrator thinks you want to add a new point instead? Zoom in as much as possible to make it clear where you are tapping. This has been a problem for me too, the gradient annotator can be really fussy in Illustrator on the iPad...
