It's getting ridiculous.
I've tried contacting help, and I'm being told that no one can or will help me, and that there is no support for Illustrator iPad.
I'm paying a monthly fee for this software to work. (And yes, I've deleted and reinstalled, I've updated to the newest version, I have an iPad Pro, etc.)
Here's what's happening:
While I'm drawing on the iPad, suddenly without warning and for no reason, my already drawn brush lines will default to a 1pt square line.
In the cases fo the attched files, the lines are drawn in 1pt variable width (pressure) set to 98%.
"Undo" does not affect the change, because no action made it happen. It's just a glitch in the program. So far, the only solution is to stop, open the file in the desktop version, and reassign the proper brush to the the lines again, checking every layer (sometimes it's all layers, even locked ones, sometimes it's only a few).
It's incredibly frustrating and time-consuming.
The link is a video to show the process of fixing it. Attached are two images that show the bug and the lines as they should look after I've spent several minutes resetting them.

This is what they said to me:
We had a conversation regarding your issue that already created art is changed to a default brush so we suggested to uninstall the Illustrator application restart the system and then try to install Illustrator.
As we had already informed you we have limited support for the iPad since Illustrator is desktop-oriented. I hope you understand and I deeply apologize for the inconvenience caused to you. Please check if there's any updates left from the apple and check it out.
If you are still facing the issue, kindly feel free to reach us back and we will be glad to assist you further.
You can refer to the below-mentioned self-help article and save it for future reference:

This has happened with multiple files, just to be clear.
The file has some lines that have defaulted, and some that are not. Screenshot includes those lines that have defaulted. Interestingly, it's not letting me attach the ai. How would I share that with you, then?

Hi there! It's been ten days since I originally sent the files you asked for, and a week since you acknowledged receiving them.
Is there any progress?

Thank you for your patience as we work through this issue. I understand how frustrating it must be to deal with a persistent bug, especially when it disrupts your creative process. I apologize for the delay in our response, and I appreciate you providing the file so we can investigate further.
I’ve escalated this to our product team lead, who is actively investigating the problem with the brush lines reverting to a default style. Please rest assured that we’re committed to finding a solution for you. I will keep you updated on any progress we make or if we need additional information from you.
Thank you for bringing this to our attention, and I appreciate your understanding as we work to resolve it.
Best regards,
Anshul Saini

Checking in. It's been over a month now.
Incredibly frustrating that for months I was told that it was not a bug or that you would not support the issue, and now you're acknowledging the issue, without forward progress (or at least that you're sharing).

Yes, this is frustrating. Because it affects my process regularly.
And I have to pause, go to desktop, change back all my brush strokes, save, and start again...only to have it sometimes happen 5 minutes later.

FOR ANYONE WHO IS HAVING THIS SAME ISSUE:
One thing that has *helped* but not actually fixed the issue is to regularly outline my paths as I complete an area.
The frustrating part about this, as you probably immediately understand, is that it means those outlined strokes are not as editable as the original paths.
However, to keep working, this is the only solution I have found, as Adobe take their time sussing out an issue I reported months ago (and some of you have probably tried to report WAY BEFORE me.).
UGH.
