adding pattern behind text

I am using Rig Bold Solid text, which I want to fill with pattern. I have created it in photoshop here to demonstrate the effect I would like to achieve.

The white area inside the lettering is the area I want to fill with pattern, in illustator, but it is not part of the text. Just the red lines...I have not explained this well but if someone can help please do. If I create a clipping mask it turns the red into a pattern as this is the text but it is the hollow area behind the

paths.Thank you!

Create Outlines for the text and either use the Shape Builder tool or Live Paint to fill the transparent areas.
