I just tried opening multiple .ai files and Illustrator is completely non-responsive. InDesign took 15 minutes to fully load.
Catalina 10.15.6
iMac (Retina 5K, 27-inch, 2019)
3.7 GHz 6-Core Intel Core i5
40 GB 2667 MHz DDR4
How do I get this corrected?

Please try booting the system into Safe Mode (https://helpx.adobe.com/in/x-productkb/global/start-safe-boot-mode-mac.html) and check how it works there. It starts your system so that it performs certain checks and prevents third party software/ services from automatically loading or opening. If it works fine in Safe mode, then there is some third party service or application like antivirus, plugins or web extensions which are conflicting with the Illustrator.

Sorry to hear about your experience. I'd request restarting your computer once and check if it resolves your issue. You may also try resetting the preferences of the Adobe Illustrator & Adobe InDesign. Let us know if it helps.
**Please note that resetting preferences will remove all the custom settings and apps will launch with default settings. You can also take a backup of the folders in case you want to. Location is mentioned in the articles.

Your request of resetting preferences didn’t work. I need all of my Adobe software apps to be working correctly before I begin work tomorrow am. This is unacceptable.

If that doesn't help either, login to root account (https://support.apple.com/en-in/HT204012). Check how application works there. If it works fine there, then it could be related to permission errors.
