AI 2021 text vanishing when text block size is changed

Since the lastest 2021 update (25.1) I have been having this issue (numerous files).

When I have a textblock with text in it and I change the size of the textblock by selecting two nodes my text vanishes and I cannot get it back.

I have tried undoing and it doesnt come back. I have also tried saving and restarting and it saves with the text gone.

I am not a beginner user and I have not had this problem before.

As an update, my file has just crahsed and the recovery file has the fonts there again. It must be a bug.
