We have actions set up for our work on our 2020 Illustrator CC computers, but some of our coworkers have 2018 Illustrator (Company hasn't updated all Macs). Will the actions created in the newer Illustrator 2020 work in Illustrator 2018?

Perhaps or perhaps not. Depends on what specific commands you are using in the action sets.

Unfortunately, some actions nowadays may even fail if you are sharing them in different international versions of Illustrator. That means, for example, that an action made in a German version of Illustrator may not work as expected if you are trying to execute it in an English Illustrator version (or some other international version).

It's a pity.
