Good morning,
To create a rosette, I thought it would be better to create a symbol to adjust the details and pass on any corrections I made to it. But what I want is to change the rotation point for this symbol and put it lower. I only found general tutorials, and not this detail. Thank you for all your help.

That is a simple reflection, but would also work with rotation

Nothing to do. It behaves just like the regular transform - it's based on the automatically calculated bounding box. You could of course create a dummy rectangle around your artwork to manipulate this stuff, but this may cause issues later on and also affect the symbol placment in other ways...

As alluded to by Mylenium. Adding a dummy object will help you.
Open one instance of the symbol and add a no-fill no-stroke object like a circle or rectangle, that is larger than everything else and locate it's centre where you want the centre of the placed symbol to be represented, then when you close the instance all the symbols will update - this may mean additional steps for you if it is a retro-fitted change after you have worked on positioning of the symbols already so save your work and test before committing the change.
