Big display problem on Illustrator

I've been experiencing display problems on my illustrator documents for a few days now.

Some elements of the duument disappears or are displayed as a complete glitch like in the attached example.

I do have Illustrator in its latest version. I have even reset the preferences but nothing changes ...

I am working on a macbook pro retina in early 2013 under Mojave 10.14.6.

Have you ever encountered this problem? If yes, have you found solutions ?

Try pressing ⌘E (shortcut for View menu > View using CPU) and see if that makes a difference.
