Can't finish previewing in Illustrator 2021

Hi, I have a little issue that is really starting to get very annoying. Everythime I try to do something with color, mostly with the pen tool, a message pops up ''Can't finish previewing. Could not complete the requested operation''. I also somehow go to the vector line mode.

I have the latest version and I have 291 Gb of space left. Is there something else I'm missing here? Please let me know.

Have you checked you meet all the minimum specifications with your setup, including graphics card?
