You can do that with actions (assign shortcuts to them).

Works well. I wish I could leave some font parameters unchanged when doing that. For example, I would like the action to change the font family only but none of the other parameters like font size. It seems that font size is recorded in the action no matter what.
You can do that by recording the action and changing the font through the Type menu > Font submenu.

I'm pretty sure that you won't discover any in-depth knowledge in the manual.
Regarding actions you will usually have to rely on Illustrator users with practical action skills.
I asked because I had quickly searched the online manual prior to asking here and did not find anything.
