Color settings in Illustrator 2021 keep reverting to "Emulate Adobe 6.0"

The color settings in Illustrator keep reverting to "Emulate Adobe 6.0" in Illustrator, when they should be set on "Adobe RGB". Every time I hide the app or I switch to another app window, the colour reverts to this washed out, dull version. I've already checked my colour settings in Bridge and even though it's synchronised, it says it's unsynchronised in my CC apps. It's very annoying having to do this every time I switch to Ai and makes my workflow very slow. Please suggest a fix!
