Corners not smooth in Illustrator

Hi all. I need help with my corners and edges in illustrator. I'm using 2021 version Illustrator and my corners and edges aren't smooth or sharp. The first screen shot where I circled is what I'm talking about. I've used the convert anchor on the tip of my shape but it looks like there are extra anchor points on the side where I've circled but there aren't. I'm not sure if this is a preference setting I'm not aware of but I've never had an issue until using 2021 version? In the second screen shot of the single pink circle, hopefully you can see from the screen shot, the edges are jagged. I appreciate any help thanks!

You are probably using the GPU Preview, fast but sometimes inaccurate.

Try to switch between GPU and CPU Preview (Cmd or Ctrl E).
