Default Settings for Apearances in Properties panel

I am fairly new.  I am making a detailed drawinng, mostlty with the pen tool.  Every time I leave the pen tool, the fill changes to white and the stroke changes to none and then when I go back  to the pen tool I have to set them so the fill is none and the stroke is black. This is extremely tediously and takes a great deal of time.  I am certain that there is a way to keep my fill and stroke as I need it to be, but I can't find it.

In the Appearance palette deselect New Art Has Basic Appearance.
