Oh sure, well - does Adobe have access to the files created on Cloud? or just the user / content creator?

You always have to assume that the people who manage a cloud service have access to your information, unless it is encrypted before it leaves your computer, using a key that you keep secret.  That doesn't mean everyone in Adobe can look at it, but there will be authorized people who could.
