Hey guys, fairly new to illustrator so give me a break if this is super easy but it's doing my head in.
Ive used the pen tool to trace a design and I want to keep some areas transparent so it's as if it's been written with one stroke. The inside of the O and the E aren't staying transparent and just changing to a full colour when I click no fill.
I've tried merging all shapes but that creates one big stencil of the whole this.
ive attached some images to show what I mean. Please help. The top word is how I want it, but without copy and pasting the insides and changing to white!!

If the straightforward ways of Pathfinder>Minus front and making a Compound Path (Ctrl/Cmd+8) fail to work, you can try the Shape Builder.

You could also Group the white paths, select everything, and turn it into an Opacity Mask (Transparency palette) with Clip unticked and Invert Mask ticked, but
