How to merge colours through eyedropper tool

Hi,  I'm new to Adobe and wanted to use this software to design fashion pieces and explore my creativity! 

I have a few landscape images of sunsets/oceans that i am using for colour inspiration, but I want to combine these colours through using the eye dropper tool to apply to a new object to create a multicoloured sample design. Is this possible to do and what woudl be the best software for this?

Which version of Illustrator are you using?

Also, can you please share at least one screenshot or a sketch that may explain what you are looking for?

I think it is not clear at the moment.
